Baked Eggplant Rolls

INGREDIENTS:

  • 8 medium slices of eggplant
  • 2 tbsp olive oil
  • 2 cups cherry tomatoes
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • pinch red pepper flakes
  • salt and pepper to taste
  • 1/2 cup ricotta or vegan ricotta
  • 1/2 cup parmesan cheese or vegan cheese

INSTRUCTIONS:

  1. place slices of eggplant in a bowl and sprinkle with salt, let sit for 20 mins, drain, do not rinse.
  2. light oil a sheet pan and a baking dish, pre heat oven to 350. bake eggplant slices on sheet for 10 mins, set aside to cool.
  3. in a medium saucepan, add al chopped veggies except eggplant, season and cook on low to medium until golden and tender. allow to cool slightly.
  4. place a heaping spoonful of ricotta in the center of each eggplant slice, followed by a spoonful of veggie mixture. roll and place in baking dish, top with cheese.
  5. bake for 10 mins the broil for 2 mins to brown the top.
  6. you may also add your favorite marinara sauce on top. Also try adding quinoa or lentils to the filling for a protein boost!

Shrimp Santorini

INGREDIENTS:

  • 1 lb shrimp, peeled/devined
  • 15oz can crushed tomatoes
  • 2 cups halved cherry tomatoes
  • 1 small jar of capers
  • 2 lemons
  • 1 cup dry white wine
  • 1/2 tsp oregano
  • 1/4 cup chopped fresh basil
  • salt and pepper
  • 1lb package spaghetti
  • 1/2 cup parmesan cheese

INSTRUCTIONS:

  1. pepper pasts according to package
  2. while the pasta cooks, pat dry shrimp with a paper towel, season with salt, pepper, and oregano
  3. heat large skillet over medium heat, add drizzle olive oil
  4. add shrimp to hot skillet and brown on both sides, then add white wine and reduce by half, add zest and juice of one lemon
  5. add remaining ingredients except basil, and simmer for 10 mins
  6. season and toss with pasta adding fresh basil, sprinkle with cheese
